A Recipe and a Christmas Prayer…

Rachel Olsen asked for some yummy treat ideas while writing and here’s what I have. This recipe is from How it all Vegan, with a few tweaks at the end :).  At the bottom of this recipe is a little prayer for Christmas…

Spicy Oatmeal Cookies:

– 3cps rolled oats
– 1cp flour**
– 1/2tsp salt {I usually skip this one}
– 1tsp baking soda
– 1tsp cinnamon
– 1tsp nutmeg
– 1tsp ground ginger
– 1tsp cumin
– 1/2tsp dried cardamom
– 1/2tsp pepper
DASH of cayenne pepper {I once added a bit too much…yeah, talk about a spicy cookie!!}
– 1 banana mashed {TIP: Peel and freeze one over night and when it thaws it’s super mushy!}
– 1/2cp dry sweetener **
– 2tbsp oil
– 1cp sour soymilk {add 1tsp vinegar to soymilk}
– 3cps raisins**

**Options: {this is how I make mine}
– add 2scoops chocolate protein powder
– 1cp wheat flour and 1/2cp honey instead of regular flour and dry sweetener
– 1 1/2cps cranberries and 1 1/2cps dark chocolate chips instead of raisins

Baking:
1. Preheat oven to 375*
2. Mix first 11 ingredients together then add the rest
3. Bake 8-10 minutes

TIPS:
1. If you use the options they will spoil faster, but they are better for you and so much yummier! Freeze what you don’t eat after three days and pop them in the microwave for about 45sec or so.

2. I eat two for breakfast when I make mine and then have a couple with my afternoon cup of coffee; nuking them for about 20-30sec gives them that fresh from the oven warmth.

A Christmas Prayer

Heavenly Father,

Who are we that You would look down on us and smile?  You created us out of the dust of the earth; You knit each of us together in our mother’s womb, just as You knit Christ together.  Before the creation of the world, You knew our names, You chose the place where we would live, the family who would raise us.  You created us to live in communion with You, walking with You side by side through life.  You gave us everything we needed and we walked away.  We chose instead to follow our own desires which have lead us down the pathway of sin.  We have chosen to live outside of Your perfect plan and your perfect will.  Instead of loving one another, we have lived with unforgiveness in our hearts.  Instead of showing kindness, we have ignored those in need.  Instead of words of compassion, we share no words at all.  Lord, by our own sin, we have separated ourselves from You…but no matter how much we have done to hurt one another and to hurt You, You have not withheld Your unconditional love for us.

You could not bear the thought of being separated from us, Your creation, Your children.  Instead of allowing us to wallow in our own sin, receiving the just punishment for our rebellious hearts, being separated from You for all eternity, You stepped into our world.  You stepped down from Your throne and out of eternity to come to us as a precious child named Jesus.  He lived life perfectly, without sinning and without falling away from Your will.  He came with one purpose, to die.  Christ was born so that He could take on our punishment for the sins we committed.

Father, we thank You.  We thank You for not being fair, for not giving us what we deserve, for sending Your Son to wash away our sins through His death on a cross.  Prepare our hearts for His triumphant return!  As His birthday approaches, fill us with a joy unlike any other.  Not because of the gifts we receive from family and friends, but because of the gift You have given us through Jesus Christ!  May He reside in our hearts, thrusting out our desire to turn away from You. As the 25th gets closer and closer open our eyes for opportunities to forgive those who have hurt us and seek forgiveness from those whom we have hurt.  Help us to seize the opportunity to show kindness and compassion to our family, friends, and even our enemies.  Above all, give us courageous hearts to share our faith in Jesus Christ, our Lord, our Savior, and Brother.  Come quickly Lord Jesus Come. Amen.

  2. Thank you for the Vegan recipe. I am a vegan and very rarely do you see someone pass on recipes unless it is from an actual vegan website.

  3. Heather, thanks so much for sharing the recipe and the prayer with us today. I loved the poem and will remember to share this one with others. Jesus is the Reason for the Season! Without this truth, none of us would be able to rejoice in the fact that God loves us and will forgive us so that we are able to spend eternity with Him in Heaven one day. I am most grateful for my relationship with the Lord because He has taught me the valuable lessons of trust and love more than anyone else in life. He comes first and I am second in my life! Merry Christmas and Happy New Year! May God continue to richly bless your life! P.S. – I look forward to trying out your holiday cookie recipe too!
